It’s late at night, and you want to eat something light what to eat?  Not dinner but a snack?  I remember in Cyprus my mum will cut up Watermelon in small cubes and crumble Feta cheese either for breakfast or as a snack in the evening.

Watermelon with Feta cheese, it’s so good.  Although watermelon is available year round, domestic watermelon is in its peak season from May through August, and imported watermelon is in its peak season from March through May.

Benefit of Watermelon

Did you know Watermelon is about 92% water so if your watermelon feels heavy for its size, it means it’s probably full of water and it is very sweet.  It contains nutrients and Beneficial plant compounds that may help prevent cancer.  Also watermelon is one of the lowest in calories, only 46 calories per cup.  It may lower the risk of heart attacks and strokes by reducing blood pressure and cholesterol levels. Best part, it is good for the skin and hair……..

How to test a watermelon, well the easiest way tell is by the sound, flick a few of them with your finger and if it sound hollow “thud” then it’s a good one.

Organic Watermelon with Feta Cheese, lime, and mint

INGREDIENTS

Serves 1 person

1/4 slice in cube Watermelon 
Crumble Feta Cheese
Fresh organic Mint (optional)
Lime slice thin
Mint

Serves 10 persons

1 whole Watermelon cut up in cubes
(First cut the ends off, stand it up and cut the contour of the Watermelon)
1 block of Feta Cheese cut up in cubes about an 1 inch x 1 inch
Fresh organic Mint
and
Lime slices
Party Stick
