Sweet Potato 2 ways

Sweet Potato 2 ways, first Sweet Potato Dip, on to the farmers market I grab 3 small sweet potatoes or 2 large ones.  This is a simple recipe and it’s healthy for you, spread it on a toast with or without feta cheese.  Sweet potatoes are filled with antioxidants and amazing anti-inflamatory properties, which it’s another important fact to keeping healthy.

Makes one bowl Sweet Potato Dip

Sweet potato dip with grilled vegetables

Ingredients

2 large sweet potatoes or 3 small ones (boiled, skin peeled and mashed)
1/4 cup nonfat plain Greek yogurt
1/2 tsp ginger powder
1 tablespoon tahini
1/2 lemon juice
1 tsp garlic (dried)
1 tsp flax oil/ or extra virgin oil
1 cup chick peas
1/4 cup parsley, chopped
Sprinkle cinnamon, or white sesame seeds, after it’s process,and on top
1/2 cup cashews (optional)
If you want it spicy add:
1 Jalapeno pepper (tail removed, do not remove the seeds)
Salt and pepper to taste

Preparation

Combine all the ingredients in a food processor and purée smoothly 2 to 3 minutes.

Take it out in a serving bowl and serve at room temperature or chilled out.  Serve it with your favorite veggies, crackers, pita bread.

Sweet potato fries

  • 2 pounds sweet potatoes, peeled
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

PREPARATION

  1. Heat the oven to 400.
  2. Cut the sweet potatoes into sticks 1/4 to 1/2 inch wide and 3 inches long, and toss them with the oil or you could do the same recipe with pita bread.
  3. Mix the spices, salt and pepper in a small bowl, and toss them with the sweet potatoes. Spread them out on 2 rimmed baking sheets.
  4. Bake until brown and crisp on the bottom, about 15 minutes, then flip and cook until the other side is crisp, about 10 minutes. Serve hot with the sweet potato dip.

Spinach Quiche with sweet potato crust

A healthy version of the classic spinach quiche with sweet potatoes.  Paleo, gluten free.  Definitely need a slicer for the sweet potatoes. Serves 6 people.

Ingredients

Thin sliced sweet potato

2 Sweet potatoes medium size orange, peeled, finely sliced
1 tbsp extra virgin olive oil
2 garlic clove finely chopped
1 large brown onion finely chopped (1/2 cup chopped onions)
14 oz frozen small whole leaves spinach or 1 bag (5 ounce of fresh organic spinach)
1/4 tsp pepper
1/2 tsp salt

Quiche Egg Batter

4 large Eggs
2 large egg white
3/4 cups almond milk or coconut milk or even Hemp Milk
1/4 tsp ground nutmeg
1/4 tsp salt and pepper
1/4 tsp crushed red pepper
1/4 cup or more if needed graded gruyere cheese, or Halloumi cheese from Cyprus,
or 1/3 cup crumbled feta cheese.
