Directions
1 cup sprouted mung beans (follow the instructions from the package)
3 cups water or broth
4 chopped green onions, white and pale green parts only
2 ribs celery, trimmed and sliced cross-wise into c-shapes
1 ripe avocado, sliced
1/3 cup chopped almonds or walnuts
1 apple, diced
1/4 cup olive oil
3 tablespoons loosely packed chopped Italian parsley
2 tablespoon lemon juice
sea salt & freshly ground black pepper, to taste
Be creative add the sprouted mung beans in your favorite salad, pilaf, soups, purees, and even sandwiches.
Preparation

Add 1 cup truRoots Sprouted Mung Beans to 3 cups boiling water in a medium saucepan. Gently boil for 5 minutes. Remove from heat. Cover and let stand 4 to 8 minutes, depending on desired texture. Drain, as needed makes 2 to 4 servings
Mix the mung beans with the green onions, celery, walnuts, or almonds, apple, avocado, olive oil, parsley, lemon juice and salt and pepper. Toss well. If you like feta cheese then added, too.
