Spaghetti Sauce

Homemade Spaghetti sauce a great dinner to invite friends and families even for the bachelor and bachelorette easy and simple to make. You are at the farmers market, grab 5 things, fresh basil leaves, fresh oregano leaves, fresh parsley leaves, Garlic, and large Roma Tomatoes about 2 1/2 pounds.

I remember when Zach was about 1 years old he was on the high chair eating spaghetti.  Friends stop by to chit chat for few minute then as they were walking out, I followed them without realizing I locked myself out with Zach in the kitchen on the high chair eating spaghetti.   The only solution was for me to do is to break a window in one the kid’s bedroom, which I did and do you believe I never had a cut on my body by breaking the glass window and minds me, I was barefoot.  Zach was scared of course alone in the kitchen probably because he was left alone for few minutes that seemed an hour and so did I.  The power of a mother what she can do for her children.

Spaghetti Sauce 

Ingredients

2 1/2 Pound Red Roma Tomatoes (peeled and cut in quarters)
Chop fresh bouquet of Basil leaves 
Chop fresh Oregano leaves
Chop fresh parsley leaves
Chop fresh sage
4 chop garlic cloves
1/2 Extra Virgin Olive Oil
Sprinkle Sea Salt and pepper
1/2 teaspoon red peppers flakes
Angel Hair Pasta, Soba Noodles or Miracle Noodles Angel Hair  Miracle Noodle Zero Carb, Gluten Free Shirataki Pasta, Angel Hair, 7-Ounce (Pack of 6)

Fresh Parmesan cheese, Halloumi cheese from Cyprus or Myzithra from Greece

Preparation

Cut in quarters cook the Roma Tomatoes simmer for 30 minutes
To ensure a thick, rich sauce, pour off and save the extra liquid.
Put drained tomatoes through a food mill to remove skins and
seeds.

2) Meanwhile, cook your pasta according to package instructions.  Drain and rinse in hot water to remove loose starch.

3) Chopped all 3 fresh herbs, oregano, parsley and basil mix them in a bowl, add olive oil enough to cover them with 1/2 of lemon juice, let it set for few minutes.

4) Place pasta in a large bowl and toss with fresh herbs and tomato sauce  Sprinkle enough of Parmesan Cheese, Halloumi Cheese from Cyprus or Myzithra from Greece, and a 1/2 teaspon red pepper flakes.  Bon Appétit

You’ll have enough to freeze some of the sauce for another day or invite a friend.

Sprinkle with fresh grated Parmesan Cheese, Halloumi Cheese from Cyprus traditionally made from a mixture of goat and sheep milk or Myzithra from Greece, a fresh whey cheese, relatively low in fat, and similar to ricotta. You can find them at AJ’s, Wholefood or Middle Eastern Store which is cheaper.
