If you love Shrimp then I am sure you will love this recipe. One of my favorite recipes by Chef Chris Katechis and so easy to make. Chef Chris Katechis loves to experiment different dishes
Shrimp Curry Rice
Ingredients:
- 20 medium to large shrimps, peeled and divined
- Pepper
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1/2 cup chicken broth
- 1/2 cup dry white wine
- 1/4 cup chopped fresh parsley, or about 1 tablespoon dried
- 4 fresh green onions, thinly sliced
- 4 cloves garlic, finely minced
- 1 1/2 teaspoons curry powder, or to taste
- Salt, to taste
- 2 cups of cooked rice ( preferably Basmati)
- Optional sprinkle a little feta ……..for the Greek touch…….Opa!
Preparation:
Peel shrimp and lightly sprinkle with a little pepper.

Heat oil and butter in a large skillet over medium heat. Add the chicken broth, wine, parsley, green onions, garlic, and curry powder. Bring to a boil; reduce heat to medium-low and simmer, uncovered, for 5 to 7 minutes. Add shrimp and simmer for 3-4 minutes longer. Add salt, to taste. Fill two small cups with cooked rice, press down and insert to the center of the plates. Place shrimp with sauce over and around the rice. Springle remaining green onions on top. Serve with a Greek Salad. Thank you, Chef Chris.
