Red Lentil Soup

When I was a little girl, I did not appreciate the delicious meal my mom use to make us but I do now.  One of them, it was Red Lentil Soup.  I purchase red lentil couple days ago, and decided to make it.  I love the flavor, great with crusty bread and with a Greek salad.

Red Lentil Soup 

Ingredients

Red lentil soup

1/2 onion, diced | 1 clove garlic, minced
1/4 cup diced tomatoes, drained and peel the skin off
5 cups pastured raised chicken broth ( set aside another cup of chicken broth)
1/2 cup red lentils (soak overnight)
1/4 cup fine bulgur
1/4 cup basmati rice (soak overnight)
1 tbsp dried mint
2 teaspoon paprika
2 tbsp tomato paste, add more if needed
1/2 teaspoon cayenne pepper
salt and pepper to taste
crumble feta cheese
1/2 avocado

Heat the oil in a large pot over high heat.  Cook and stir the onion until it begins to soften, about 2 minutes, stire the garlic for another 2 minutes, add the diced tomatoes to the onion mixture, and continue to cook, stirring another 10 minutes.

Pour the chicken broth, red lentils, bulgar, rice, paprika, tomato paste, cayenne pepper, and mint, season with salt and black pepper.  Bring the lentil soup to a boil then simmer until the lentils and rice are cooked through, about 30 minutes.Pour half the lentil soup to a blender (if needed add a 1/2 to 1 cup of chicken broth) and start to blend (do not let it to purée).  Pour into a bowl and sprinkle mint and crumble feta cheese or even avocado,  if you have it.  Serves 2 with crusty bread or a baguette and with a small Greek salad.

I made mine a little thicker and added small pieces of avocado in my bowl.  Everything is about expirementing your food.  Bon Appetit!
