Porridge 4 ways (Oats)

After working 9 hours a day, I decided I needed something healthy, something that I can feel more energetic, and not feeling hungry, porridge is the answer.    I remember when I was a little girl in Africa, my dad will cook for me every morning porridge during school days, and do you remember the children book of “Goldilocks and the Three Bears”.  She sits in their chairs, eats some of their porridge, and falls asleep in one of their beds.  Great for kids and adults, 4 ways to cook Porridge with seasonal fruits.

Basic oatmeal (3 parts of water with 1 part of oatmeal and 1tsp of sea salt)

Porridge with Pomegranate

INGREDIENTS

1 full coffee mug of porridge
2 full coffee mug of water or 1 cup of water, and 1 cup of milk Almond, Rice or Cashew Milk
Pinch of cinnamon  
Pinch of Sea Salt (very important)
Pomegranate
Maple syrup 

COOKING INSTRUCTION

1. Put the oatmeal, a dash of cinnamon, and water into a pan.

2. Stir over a medium heat the oats, water, and cinnamon until the porridge thickens and boils, then reduce the heat to a simmer and keep stirring. The porridge will be cooked in 3 or 5 minutes.

3. Some like thick porridge, others creamy smooth, and you can adjust the consistency just by adding a little water.  You can also make porridge using 1 Coffee cup milk and 1 Coffee cup of water – My favorite is Almond Milk or Cashew Milk.

4. In a bowl add the porridge, sprinkle pomegranate, and maple syrup.  So, good. Serves 2 to 3 people depending the servings.

Porridge with Figs and Banana

INGREDIENTS

1 full coffee mug of porridge
2 full coffee mug of water or 1 cup of water, and 1 cup of milk like Almond, Rice or Cashew Milk
Pinch of Sea Salt
cut up figs ( I usually peel the figs and cut up in small pieces)
1 cut up banana, (sauté with the coconut sugar)
3 to 4 tbsp Coconut Sugar
Sprinkle Hemp seeds
Sprinkle chia seeds

INGREDIENTS

1/2 full coffee mug of porridge
1 full coffee mug of water or 1/2 cup of water, and 1/2 cup of milk Almond, Rice or Cashew Milk
Pinch of cinnamon, optional
Pinch of Sea Salt (very important)
coconut sugar
1 tbsp raisin
1 tbsp raw honey

COOKING INSTRUCTIONS

My other favorite is adding Dry Ancient Grain Granola by Purely Elizabeth and honey.  So, so delicious.

4. Stir with a wooden spoon or the Scottish spurtle and mix clock wise with a wooden spoon, *last minute add a pinch of salt.  In a bowl add the porridge, coconut sugar, raisin and raw honey.  Serves 1 person.

INGREDIENTS

1/2 full coffee mug of porridge
1 full coffee mug of water or 1/2 cup of water, and 1/2 cup of milk Almond, Rice or Cashew Milk
Pinch of cinnamon, optional
A package of frozen strawberries
A small bottle of apple juice
1 tbsp of Chia Seeds

COOKING INSTRUCTIONS

1. Put the oatmeal, cinnamon, and water into a pan.

2. Stir with a wooden spoon or the Scottish spurtle over a medium heat the oats, water, and cinnamon until the porridge thickens and boils, then reduce the heat to a simmer and keep stirring. The porridge will be cooked in 3 or 5 minutes.

In a separate pan add frozen strawberries, a small of bottle of apple juice, and chia seeds, stir until it becomes thick like jam. In the bowl add the porridge, strawberry jam with the chia seeds. Serves 1 person.


*Oat milk will be our next obsession , it’s a lot better for the environment than some other options.  It’s a Barista’s non-dairy dream, oat milk has a lot of soluble fiber.  OAT-LY is one of the biggest oat milk brands, and it’s from sweden coming soon to the American grocery stores.
