 Pasta with Garlic 

After eating a Thanksgiving Dinner, I don’t know what it is, but the next day,  I crave pasta.  It is simple Pasta with Garlic.

First lesson is how to cook the Perfect Pasta with Gordon Ramsay

First water in a large pan to make sure the pasta has efficient room to cook evenly.  Season with salt and extra olive oil, that stops the pasta from sticking together bring it to a boil, then you add the pasta 3 to 4 1/2 minutes then use your tongs and turn the pasta around.  Make sure the pasta is firm, into the colander, drain the pasta, season salt and pepper and 1 tablespoon  of extra virgin of olive oil.  (the olive oil stops it from sticking together.)

Angel Hair Pasta with Garlic

Ingredients:

1 pound of Angel Hair Pasta
Salt and freshly ground black pepper to taste
6 cloves garlic, sliced thin and slow cook
1/2 cup extra olive oil
1/4 teaspoon red pepper flakes, or to taste
1 cup chopped Italian parsley (1 bunch)
1 cup finely grated fresh Parmigiano-Reggiano or grated Halloumi cheese

1. Heat the olive oil in a small pan over low heat to slowly toast garlic, about 10 minutes. Cook and stir until garlic is pale golden brown remove from heat. (Do not brown the garlic).

2. Drain pasta when it is done and reserve ¾ cup pasta water.

3. Stir 1/4 tsp red pepper flakes, fresh black pepper, and salt to taste into the pasta. Pour in olive oil and garlic; add the chopped Italian parsley and grated cheese of your choice. Add water if pasta is too dry.

3. Simple recipe pasta, and delicious.  Serves 3-4
