Parsnip Soup

Don’t throw away your parsnips, let’s make Parsnip Soup.  It’s healthy, delicious and a great way to lose weight. I even eat it raw.  Parsnips are a root vegetable that is native to Eurasia and have been used extensively in that region since ancient times, and it is related to carrots and parsley.  Parsnips help in weight loss, boosts immune system, helps maintain healthy heart, aids in reducing cholesterol levels, and reduces risk of neual tube defects in infants……

Parsnip Soup

1 cup almonds, soaked overnight, drained and rinsed
4 cups water
1 1/2 cups parsnips, chopped
1/2 cup celery, chopped
1 garlic clove
Pinch of sea salt
Pinch of cayenne (optional)
2 tablespoons fresh thyme, chopped
1/2 avocado cut in small pieces for garnish

Description

Blend water and almonds in a high speed blender for a few minutes then strain. Place strained milk back in to the blender and add the remaining ingredients. Great with crackers or a rustic bread.
Optional: Garnish with Rosemary Garlic Oil, avocado or parsley

Rosemary Garlic Oil

Blend olive oil with 1 tablespoon fresh rosemary and 1 clove garlic in a high speed blender
