Leeks, Celery, Potatoes with Olives
Leek, a cousin of the onion and popular to the Mediterranean countries. Adding celery, potatoes and olives makes an amazing dish. It’s light and delicious.
Ingredients

1 large leek ($1.20)
2 celery stalk ($1.29)
1/2 cup olive oil (I always have olive oil in my pantry)
1 medium size onion, finely chopped
2-3 medium size yukon potatoes ($1.50)
1 whole lemon juice (2 for $1.00)
1/2 cup pitted calamata olives
1 cup of water
pinch of pepper
Wash the leeks and the celery then cut the stalks into 1 to 1 2/2 inch pieces. Boil the olives changing, the water twice to get rid of the salt.
In a pan lightly brown the chopped onion in the olive oil stiring frequently, add the leeks, celery and potatoes along with 1 cup lukewarm water and simmer, cover for 30 minutes. Uncover for 15 more minutes. Throw in the olives and cook for 10 more minutes. Add lemon juice and serve the dish.
