Greek Salad

I love making Greek salad at home or share it with families and friends.    I change the herbs and the seeds often or add new ones.  Greek salad is where you can use your creativity and can’t go wrong with it.

For breakfast, lunch or even dinner a Greek salad is amazing.  I cut up a tomato, kalamata olives, feta cheese and slice of cucumber sprinkle extra virgin olive oil and lemon with a  cup of green, black or white tea.  Whatever I have in my kitchen cabinet.  Love simple things in life.

Greek Salad

2 Organic Large, ripe tomatoes, rinsed, with or without peeling the skin off & cut into 6 wedges
1 Organic cucumber, washed, with or without peeling the skin off, and slice
1 Organic medium red onion or yellow, thinly sliced
1/2 cup green bell pepper, sometimes I also add the yellow one
Feta cheese from sheep or goat, cut up in cubes or large square
1 Tablespoon of Caper (optional)
10-12 Kalamata olives
Sprinkle hemp seeds (optional)
Sprinkle toasted sesame seeds (optional)
Sprinkle dried Greek Oregano, you can also add basil
Health Benefit of Oregano, its name means “mountain joy” and its a symbol of happiness by the ancient Greeks and Romans.  Oregano has one of the highest antioxidant, Antifungal, Antibacterial, and May Even Kill MRSA.  Research has shown essential oils from oregano may kill the foodborne pathogen Listeria and the superbug MRSA (making it a useful addition to hand soaps and disinfectants).  Oregano Anti-inflammatory properties, useful for Upper Respiratory Infections, Cancer-fighting Effects.  So much to learn on Oregano….

I whole lemon juice
Sea salt and pepper

What’s the difference between “organic” and “organically grown?”

Organic means the item was grown with chicken manure or other organic animal matter

and

organically grown means the item was grown with all plant based materials.

Health Benefit of Capers, Antioxidant, they contain minerals like iron, calcium, copper and high levels of sodium, vitamin A (great for your eyesights), vitamin K ( bone health), niacin (protects you against cardiovascular disease and also supports cognitive functions, the digestive system) and riboflavin (also called vitamin B2, helps the body to convert food into fuel that keeps us energetic).  Capers are potent sources of fiber which reduces constipation.

Add all your ingredient in a bowl except the feta cheese, olives and dried herb and seeds, toss well. Combine the extra virgin olive oil with the whole lemon juice. Drizzle some of the olive oil/lemon on your salad then add the feta cheese, Kalamata olives and sprinkle the dried Greek Oregano. Drizzle a bit more of the extra virgin olive oil and lemon juice and Voila! So good and healthy.

Serve with warm peta bread.

If you have Basil leaves with slices of yellow onions serve with peta bread and drizzle olive oil.  Simple and delicious.
