Garlic Dip

GARLIC DIP

I love garlic dip especially when it is served with fresh farm cut up vegetables or warm pita bread serve to friends and family.  Making different type of healthy dips is wonderful to get the children to eat their vegetables.

INGREDIENTS
2 bulbs garlic
6 tbsp olive oil
1 small onion, finely chopped
2 tbsp lemon juice ( I never leave without my lemons)
3 tbsp tahini (sesame seed paste)
2 tbsp chopped parsley
Salt and Pepper

COOKING INSTRUCTIONS

Separate the bulbs of garlic into individual cloves.  Place them on a cookie sheet and roast in a preheated oven at 400 °F 8 to 10 minutes.  Set them aside to cool for a few minutes.

When they are cool enough to handle, peel the garlic cloves and then chop them finely.
Heat the olive oil in a pan or skillet and add the garlic and onion. Sauté over low heat, stirring occasionally for 8-10 minutes, or until soft. Remove the pan from the heat.
Now, Mix in the lemon juice, sesame seed paste, and parsley. Season to taste with salt and pepper. Transfer the dip to a small heatproof bowl. Serves 4

Serve with fresh vegetables, French bread baguette, and or warm pita bread.
