Chickpea Burger

Chickpea Burger, or call it Greek Chickpea Burger, it’s delicious and it’s healthy.  What more could you ask for!  Chickpeas are an excellent source of plant-based protein which can aid weight loss and prevent diabetes.

Ingredient

1-19oz can Chickpeas, rinsed
1/2 cup bread crumbs or use oats, grind
2 tbsp tahini paste
1 large free range organic egg
1 tsp garam masala (Indian spice)
2 tbsp olive oil
1 tsp coriander
1 tsp ground cumin
6 scallions, chopped
1 Garlic clove, chopped
1/4 cup Crumbled feta cheese
1 tomato
1 avocado
Pinch salt and pepper

Separate

Coconut yogurt or Tzatziki sauce
wholegrain pita bread
4 salad leaves

Preparation

Mix the ingredients above ingredients except the coconut yogurt, wholegrain pita, and salad leaves.  Heat the olive oil in a frying pan and divide the mixture into 4 patties.  Fry each patty for 2-3 minutes on each side, until golden, then drain on kitchen paper.  Serve on a pita bread with salad leaf, slice tomato, slice of avocado, and coconut yogurt.

How to make homemade Tzatziki sauce

16 oz (2 cups) thick Greek yogurt
2 Large or 5 small cucumbers
1 tbsp minced garlic
1 tbsp white vinegar
2 tbsp extra virgin olive oil
Salt and pepper to taste
1-2 tbsp of finely chopped frsh dill or mint

Preparation

Using your Food Processor, grate peeled and seeded cucumber and set aside to drain. Add garlic, vinegar, olive oil, salt, and pepper. Pulse with a quick on-off. Place in a bowl and combine with cucumber and yogurt.

Add mint or dill: Slight variations include 1-2 tablespoons of finely chopped fresh dill and/or fresh mint.

Makes about 2 cups.

  • 3 tbs extra virgin olive oil

  • Salt and pepper to taste
