Chicken Curry Rice
One of my favorite recipe that my sister Olga use to make for us was Chicken Curry Rice. She was kind enough to share the recipe with me, it is spicy and delicious. Keep healthy, eat healthy organic food.

Chicken Curry Rice Ingredients
1 lb. organic chicken (Chicken breast or dark meat cut in small pieces)
1 Tbsp Madras curry powder ( I use Sun Bran ). Hot or regular
1 tsp Garam Masala
1 tsp ground cumin
1 tsp Turmeric
1 tsp salt
1 small onion Diced
2 large potatoes cubed
1 lb. of mushrooms sliced
1 or 2 tsp of cornstarch for thickening
Mix all the spices with the salt.
Season the chicken with 2 tsp of the spices mix.
Sauté the onion with 2 Tbsp of oil for 2-3 minutes: add the rest of the spice mix. Cook 1-2 minutes: add chicken sauté till light brown, add potatoes, mushrooms and enough water to just cover the chicken. Cook till chicken is tender. You can thicken the sauce with 1-2 tsp of cornstarch. Garnish with cilantro. Serve with rice.
Home made Garam Masala
Time: 2 minutes Serves: 1 dish
- 1.5 teaspoons ground cumin
- ½ teaspoon ground cinnamon
- ½ teaspoon ground coriander
- ½ teaspoon ground cardamom
- ½ teaspoon ground nutmeg
- ½ teaspoon ground smoked paprika
- ½ teaspoon ground cayenne pepper
- ½ teaspoon fresh black pepper
DIRECTIONS: Mix and grind all spices and herbs together. Garam masala should ideally be made in small batches to retain freshness. Garam masala is a blend of spices commonly used in Indian and South Asian cuisines. There is no single recipe for garam masala. Different regions use different blends and in Indian households, garam masala is considered a very personal recipe. Common spices used to make garam masala include coriander, cumin, cardamom, mustard seeds, bay leaves, fennel, fenugreek, caraway, black and white peppercorns, cloves, mace, nutmeg and cinnamon. Traditionally, the seeds and spices are toasted, ground and then mixed together but in a pinch, you can just mix ground spices together.
Vegan Chickpea vegetable recipe
1 tsp Cayenne pepper
1 tbsp Turmeric
1 tbsp Paprika
1 tbsp Madras Curry Powder
1 tbsp Cumin
Pink salt to taste Black Pepper
15 oz vegetable stock
2 cans chickpeas, drain the water
2 medium potatoes, chopped
2 medium carrots, chopped
1 yellow onion, sliced
3 cloves garlic
Thumb of minced ginger
Sauté the chopped onion with olive oil then add all the spices including ginger, and garlic mix well for few minutes, add the chopped potatoes, carrots, and chickpeas with 15 oz vegetable stock cover and cook in a large pot for 35 minutes until carrots and potatoes are soft. Add in a bowl and sprinkle chopped parsley.
