Guacamole 4 ways
You’re invited for dinner and you want to make something quick and healthy, then this is it! I have never had anybody complaining about my Guacamole Recipe with petite peas from Trader Joe’s. It’s light, easy to make and so good.
Guacamole with PETITE PEAS
2 Tbsp extra virgin Olive oil
1/2 bunch cilantro
2 Jalapeño with the seeds
2 Tbsps fresh lime juice (if needed use more)
chop for about 15 seconds add
1 lb frozen petite peas I found the Petite Peas at Trader Joe’s, (thaw at room temperature, do not cook) add to the processor with
1/4 tsp cumin
3/4 tsp salt
Blend all together for about 1 minute.
(This dip does not need avocado, it is replaced with the frozen petite peas)
Combine all ingredient in a bowl, chop 1/2 cup of red onions, stir into the Guacamole dip, leave some on top and serve with vegetables or corn chips. So good and healthy.
*Green Peas is a great source of protein. They are loaded with antioxidants and anti-inflammatory nutrients. Green Peas have also shown to prevent stomach cancer.
Guacamole with Cilantro
1 Lime, juiced (reserve 1 tbsp)
1/2 medium onion, diced
1/2 tsp ground cumin
1/2 tsp sea salt
1 tbsp chopped cilantro
1 clove garlic, minced
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Using a potato masher add the salt, and cumin and mash. Then, fold in the onions, cilantro, and garlic. Add 1 tbsp of reserved lime juice. Let sit at room temperature for 1 hour and then serve.
- 4 large avocados, peeled, pitted, and chopped
- 2 garlic cloves, minced
- 2 Tbsp lime juice
- 2 Tbsp extra virgin olive oil
- 1/4 tsp sea salt
- Dash of ground cumin
- Dash of cayenne
Place avocados in medium bowl and use fork to gently mash. Add the rest of the ingredients garlic, lime juice, olive oil and salt and fold to combine. Season with cumin and cayenne and serve.
Makes about 2 cups
- 2-3 avocados, cubed
- 2 tomatoes, cubed
- 1/2 onion, chopped
- 1 lime, juice
- sea salt and pepper to taste
- Toss everything to gether in a bowl, stir to mix, and serve!
