Buddha Bowl 4 Ways

Budha bowl four way’s ~ it’s so easy to make with foods you love.  Sweet potato, protein-packed chickpeas, advocado, red beans with homemade tahini dressing.  A great healthy lunch on the go, also offer your friends a family a buddha bowl.

With a  buddha bowl all you need some kind of a leafy green, quinoa, couscous, barley or even brown rice, any kind of vegetables, and sometimes I add fruit like papaya, mango, grapes or even apples.  You have left overs, make your own budha bowl.  Be creative use the ingredients you love.

In Cyprus and Greece,  we offer meze, its several small dishes served as an appertizers or it can be a meal itself.

A “buddha Bowl” as defined by urban dictionary, ” is a bowl which is packed so full that it has a rounded “belly” appearance on the top much like the belly of a buddha.

Buddha Bowl Four Ways

Vegetarian buddha bowl with quinoa and chickpea.

Direction

I medium sweet potato, peeled, cut into 1-inch chunks or thin slices
3 tbsp extra virgin olive oil
salt and pepper to taste
2 cups cooked quinoa
1 15-ounce can chickpeas, drain out the water, rinse with fresh water
1 15-ounce can red beans, drain out the water, rinse with fresh water or
you can use cook beets cut up in cubes
1 firm ripe avocado, diced
1/4 cup chopped fresh cilantro, spinach or parsley
2 tbsp tahini
2 tbsp water (add more if needed)
1 tbsp lemon juice
1 small clove garlic, minced

Preparation

Preheat oven to 425°F.
Toss sweet potato with 1 tbsp oil and 1/4 tsp each salt and pepper in a medium bowl.  Transfer to a rimmed baking sheet.  Roast, stirring once, until tender, 15 to 18 minutes.  Be creative, add in your bowl what you love.

Tahini Dressing

2 tbsp tahini
2 tbsp water (add more if needed)
1 tbsp lemon juice
1 small clove garlic, minced
Meanwhile, whisk the remaining 2 tbsp extra virgin olive oil, tahini, water, lemon juice, garlic and the remaining 1/4 tsp each salt and pepper in a small bowl.

To serve, divide quinoa among 4 bowls.  Top with equal amounts of sweet potato, chickpeas, red beans, avocado.  Drizzle with the tahini sauce.  Sprinkle with chopped cilantro, spinach or parsley.

Ingredients

Add 2 frozen bananas, 1 large cooked carrot, 1 tbsp vanilla vegan protein powder, 1/2 tsp each cinnamon + ground ginger and a splash of almond milk to your blender.

Directions

Blend until silky smooth, spoon into a bowl and top with granola, strawberries + nectarine or any of your favorite fruits!

Tahini ginger Dressing ~ for your buddha bowl

Using your food processor.
1/2 cup tahini sauce (ground sesame seeds)
2 tbsp fresh lemon juice
2 tbsp nutritional yeast
2 cloves garlic
1/2 tsp crushed red pepper flakes
2 tsp Brad liquid amino
2 tbsp ginger cut up
1/2 cup water, and if needed add more.

Tahini Vinegar Dressing ~ for your buddha bowl

1 cup extra virgin olive oi
1/4 cup water
1/4 cup apple cider vinegar
2 Tbsp Tahini
1 to 2 garlic
1/2 lemon juice
1/2 cup nutritional yeast, high in B6, B12, and it can provide 9 grams of protein…..
Dash red pepper flakes or cayenne pepper (optional)

Coconut Buddha Bowl

Breakfast

7 oz frozen acai
1 cup of mix frozen fruits
1 Tablespoon protein powder (optional)
1 banana
1/4 cup granola
1/4 cup fresh blueberries
1/4 cup sliced banana
1/4 cup sliced strawberries or figs

Add the 4 ingredients in a food processor, break the frozen acai up into large chunks, add the rest of the frozen ingredients and blend.
Transfer it to your coconut bowl, and sprinkle granola, fresh blueberries, fresh strawberries or figs, and cut up banana.  So Good!

Budha Fruit Salad

1 pd strawberries, chopped
2 Mangoes, chopped
4 Kiwis, chopped
2 Bananas, chopped
12 Oz Blueberries
2 tbsp Honey  ( buy raw honey, if you buy honey turn the bottle upside down and if it creates a bubble then don’t buy it, if it done not have a bubble then that’s pure honey )
1 whole lime juice

In a separate bowl add the honey and the lime juice pour over your budha bowl salad.
