My mom and my older sister taught me to add watercress in my salads. Beet and Watercress salad is simple and healthy to make. Watercress is an incredibly healthy food packed with phytonutrients, especially when consumed raw.
The British Journal of Nutrition and Biochemical Pharmacology showed that watercress even has the ability to suppress breast cancer development.
Beet and Watercress Salad
1/2 yellow onion (chopped) and optional
toasted sunflower seeds or pistachio
1 whole fresh lemon juice
1/2 bunch raw watercress (chopped)
olive oil (optional)
When cooking beets, wash them first especially when boiling, you should not take the skins off, it retains the flavor. Once cooked, peeled and cut in cubes add the chopped onions, toasted sunflower seeds or pistachio, chopped 1/2 bunch watercress.
Toss the beets, onions, toasted sunflower seeds with the raw watercress in lemon juice. Serves 4
