The artichoke is the immature flower bud of a thistle. It is eaten as a vegetable and is culinarily classified as such. . My mom use to cook for us in Cyprus artichoke hearts with green beans. A delicatessen originated from the Mediterranean. Artichokes are loaded with vitamins and minerals like vitamin C, K, folate, phosphorus, and magnesium. One artichoke for me is like eating a meal. So delicious! Ingredients: 1 artichoke, olive oil, squeeze lemon, and a dash of salt, and I sprinkle it with Zaatar. Boil the artichoke in hot water until the leaves fall apart. When the artichoke is cooked, put it on a plate add olive oil, squeeze lemon juice, and a dash of salt. Voilà! Simple and delicious. Nikki
