Cauliflower Rice Recipe
My mom use to cook for us cauliflower rice with cheese, and now I see graded cauliflower in packages at Trader Joe. So, lets substitute basmati rice with cauliflower rice. I am not going to use cheese this time with this recipe.
1 Large Cauliflower
2 tbsp olive oil ( add more if needed)
dash of salt and pepper
1 small onion
basil or Italian Parsley
1. Pull off the leaves and break the cauliflower into large florets, then rinse them well. Leave them in a colander to let all the moisture drain off or pat them dry with a paper towel. If you plan on steaming your cauliflower rice, it’s not super important that the florets are dry, but because we are going to fry them after they are graded in the food processor.
2. Chopped onion or minced garlic adding the cauliflower. Fry your cauliflower rice with the onions and garlic on a medium heat until it starts to brown about 5 minutes. Sprinkle pepper, and salt.
3. Add chopped fresh cilantro, basil or Italian Parsley to the serving bowl.
