Sweet Potato Dip, on to the farmers market grab 3 small sweet potatoes or 2 large ones. This is a simple recipe, it’s good for you, spread it on a toast with or without feta cheese. Sweet potatoes are filled with antioxidants and amazing anti-inflamatory properties, which it’s another important fact to keeping healthy.
Makes one bowl Sweet Potato Dip
2 large sweet potatoes or 3 small ones (boiled, skin peeled and mashed)
1/4 cup nonfat plain Greek yogurt
1/2 tsp ginger powder
1 tablespoon tahini
1/2 lemon juice
1 tsp garlic (dried)
1 tsp flax oil/ or extra virgin oil
1 cup chick peas
1/4 cup parsley, chopped
Sprinkle cinnamon, or white sesame seeds, after it’s process,and on top
1/2 cup cashews (optional)
If you want it spicy add:
1 Jalapeno pepper (tail removed, do not remove the seeds)
Salt and pepper to taste
Combine all the ingredients in a food processor and purée smoothly 2 to 3 minutes.
Take it out in a srving bowl and serve at room temperature or chilled out with your favorite
veggies, crackers, pita bread. Use your imagination , be creative.
